Ingredients for 4 servings:
- 600 g soup meat, cooked, cold (beef)
- 2 m.-sized onion(s)
- 2 tbsp butter
- 4 eggs
- salt and pepper

Cut the beef and peeled onions into thin strips, fry in butter, season with salt and pepper. Whisk and season the eggs, then pour over the beef and onions, stirring slowly until the eggs are set. Serve with leafy greens. Variations include strips of bell pepper or mixed mushrooms, but the original is still best.
