Ingredients for 3 servings:
- 500 g lean minced pork (freshly minced by the butcher)
- 2 eggs
- 3 tbsp breadcrumbs (or 1 bread roll from the previous day)
- 1 tsp salt
- Pepper, white
- 1 pinch(s) curry powder
- 1 pinch(s) nutmeg, freshly grated
- 1 tsp mustard, medium hot
- 1 onion(s), finely diced
- Oil (sunflower oil) for frying

Meatballs, meatballs
If using a bread roll, soak it in water and weigh it down with a cup of water to keep it submerged. Then squeeze it out thoroughly. Combine the minced meat with the eggs, onions, spices, and breadcrumbs (or squeezed out the bread roll). Divide into 5 or 6 pieces, then roll them into meatballs in your hands and flatten slightly. Heat sunflower oil in a pan and add the meatballs to the hot fat. Reduce the heat to “low” and fry the meatballs for about 8 minutes. Then briefly increase the heat to high and turn the meatballs over. Reduce the heat to “low” and fry the meat for another 8 minutes. They should be nicely browned and crispy on each side. If you’re unsure whether they’re cooked, cut a meatball in half and make sure nothing is raw. They taste good both hot and cold.
