Working time approx. 20 minutes; Total time approx. 20 minutes
very attractive Chinese Dim Sum, can be prepared
Wash the rice several times until the water runs clear, then let it soak in cold water for an hour. Drain the rice and place it in a plate. Mix the minced meat with the soy sauce, sherry, salt, sesame oil, egg, and pepper for 5 minutes. Then add the starch and stir until a malleable mass forms. Divide the mixture into approximately 15-20 portions using a wet teaspoon. Knead each portion again, shape into a ball, and roll it in a plate with the glutinous rice. Place each ball 3 cm apart on a steamer rack. The rack must be greased with oil beforehand, otherwise the balls will stick. Steam in a wok over hot water for approximately 30 minutes. The meat mixture can also be flavored with onions, ginger, leeks, water chestnuts, or dried crab. If you want to prepare the balls ahead of time, steam them for about 20 minutes and then steam them for another 10 minutes just before eating. The finished balls can also be frozen. Do not thaw them; steam them from frozen.
