Chocolate Mudcake, New Zealand chocolate cake

Ingredients for 1 servings:

  • 450 g flour
  • 2 tsp baking soda
  • 60 g cocoa powder
  • 4 eggs
  • 1 packet of vanilla sugar
  • 400 g sugar
  • 150 ml oil
  • ½ tsp vinegar
  • 400 ml milk
  • 200 g chocolate
  • 80 ml cream

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Super chocolatey… tastes best after 2-3 days, great for preparing

Preheat the oven to 160°C (fan-assisted) and grease two loaf pans. Mixture 1: Combine the milk and vinegar. Mixture 2: Combine the eggs, add the oil, mix, and add the sugar and vanilla sugar. Mixture 3: Combine the flour, baking soda, and cocoa powder. Mix all three mixtures together, working quickly! Then pour the batter into the pans. Place immediately in the oven. Bake for 60 minutes. When the cake is done (use a toothpick to test it!), let it cool for 5 minutes, then remove from the pan. Let the cake cool further before spreading the cream! Chocolate Cream: Melt the chocolate. Add the cream and mix until smooth. Place the mixture in a bowl in the refrigerator and wait until it’s spreadable (note: this doesn’t take very long; in my experience, it takes about 10 minutes, but maybe a little longer). Spread the cream over the cake and let it set. The cake tastes best after 2-3 days!
