Mushroom spaghetti

Ingredients for 4 servings:

  • 1 bunch of spring onions
  • 1 onion(s)
  • 500 g mushrooms
  • 500g spaghetti
  • salt and pepper
  • 200 ml vegetable stock
  • 200 g double cream cheese
  • ½ bunch thyme, fresh or slightly dried
  • 2 tbsp butter for frying

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

super tasty and very simple

Slice the spring onions into thin rings and finely dice the onion. Clean and quarter the mushrooms. Cook the spaghetti according to the package instructions until al dente. Meanwhile, heat the butter in a saucepan and sauté the diced onion. Add the mushrooms and sauté for another 2 minutes. Add the stock and stir in the cream cheese, then cook for 5 minutes. Finely chop the thyme leaves and add them to the sauce along with the spring onions. Season with salt and pepper. Toss the spaghetti with the sauce and serve immediately.
