Ingredients for 4 servings:

  • 4 leaves of lettuce, not bitter
  • 10 tomatoes (cherry tomatoes)
  • 1 cucumber(s), narrow
  • 3 m.-large mushrooms
  • 1 large nectarine(s)
  • 3 sausages (Cabanossi)
  • 50 g cashew nuts, unsalted, untreated
  • 2 tbsp natural yogurt
  • 1 tbsp cream
  • 2 tbsp pineapple juice
  • 1 tbsp sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and prepare the vegetables and fruit. Tear the lettuce leaves into pieces. Halve the tomatoes and dice the cucumber. Halve and slice the mushrooms. Dice the nectarine. Slice the Cabanossi. Serve everything with the nuts. Mix the marinade in a bowl and gently stir it into the salad. If it’s still too acidic, sweeten with more sugar. This makes a refreshing side dish for a BBQ, for example.
