Ingredients for 1 servings:

  • 230 g flour
  • 80 g sugar
  • 125 g margarine
  • 1 tbsp applesauce
  • 1 tsp vanilla sugar
  • 1 tsp baking powder
  • 2 apples, depending on size
  • 1 mango(s), depending on size, as desired
  • 80 g sugar
  • 50 g margarine
  • 50 ml soy cream (Soy Cream Cuisine)

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 35 minutes

vegan French tart with apple slices and mango strips

Knead the flour, sugar, vanilla sugar, applesauce, margarine, and baking powder into a shortcrust pastry. Wrap the pastry in cling film and let it rest in a cool place for at least 30 minutes. Grease a cake tin with margarine and dust with flour. Cut the apples into thin slices and, if desired, cut the mango into thin strips. Roll out the shortcrust pastry to fit the cake tin or baking sheet, pull the edges up slightly, and press down firmly. Line the pastry with the apple slices and, if desired, mango strips until the pastry base is no longer visible. Bake the cake at 180 degrees Celsius (350 degrees Fahrenheit) for 15 minutes. In the meantime, prepare the icing. Gently heat the margarine and soy cream in a saucepan, add the sugar, and let it melt slowly. Let it simmer uncovered for a while and then check the consistency. Remove the baked tart from the oven and spread the icing evenly. Reduce the oven temperature to 160 degrees Celsius (320 degrees Fahrenheit) and bake for another 30 minutes. When the tart is crispy and light brown and smells delicious, it’s ready.
