Basic Recipe for Sushi Rice

The perfect basic recipe for sushi rice recipe with a picture and simple step-by-step instructions.

  • 250 g Sushi rice
  • 50 ml Rice vinegar
  • 25 g Sugar
  • 3 g Salt
  • 350 ml Water
  1. Briefly heat rice vinegar and sugar so that the sugar dissolves, either in a small saucepan or, as I usually do, briefly in the microwave. Then let it cool down.
  2. Cover the rice with cold water and knead with your hands so that the excess starch dissolves, the water becomes milky, then pour the water off and repeat as often (approx. 4-5x) until the water remains clear.
  3. Cover the rice again with cold water and let it rest for 30 minutes, then pour off the water.
  4. Now bring the rice to the boil with the water (amount according to the list of ingredients), simmer at the lowest temperature for 15 minutes. It is best to leave the lid on all the time so that the water vapor cannot escape.
  5. Now remove the pot from the stove and leave it to rest for 20 minutes with a cloth between the pot and the lid.
  6. Then transfer the rice into a bowl, carefully fold the vinegar-sugar mixture under the rice with a spatula or similar and cover with a damp cloth and let it rest / cool for another 30 minutes.
