Ingredients for 4 servings:

  • 1 kg onion(s)
  • 100 ml oil
  • 4 tomatoes
  • 1 garlic bulb(s)
  • 1 tbsp flour
  • 1 chili
  • 1 bay leaf
  • salt and pepper
  • savory
  • 1 cup red wine (approx. 200 – 250 ml content)

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Onion stew from Bulgaria

Finely chop the onions and sauté in vegetable oil. When they turn golden brown, add the chopped tomatoes, chopped garlic cloves, chopped chili, and bay leaf. Cover with water. Add the wine, salt, and savory, and simmer over low heat. Toast the flour in a dry pan, then stir in 100 ml of water until smooth. Stir into the stew and simmer for another 10 minutes. Season with salt and pepper. Serve the stew with bread, as it is somewhat fatty, and bread absorbs the fat better.
