Ingredients for 4 servings:

  • 300 g wheat flour type 550
  • 500 ml milk, lukewarm
  • 2 eggs
  • 30 g yeast, fresh
  • 200 g wheat flour type 550
  • 30 g butter
  • 30 g sugar
  • 250 g raisins
  • Sunflower oil for frying

Instructions

Working time approx. 25 minutes; Rest time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 30 minutes

Make a dough with 300g flour, warmed milk, eggs, and yeast and place in an oven preheated to 50°C for 15 minutes. After 15 minutes, add 200g flour, butter, and sugar to the dough and knead briefly. Place back in the oven (preheated to 50°C) for another 15 minutes. Now knead in 250g raisins and place back in the oven (preheated to 50°C) for another 15 minutes. Once the dough has increased in volume considerably, heat sunflower oil in a pan and add the dough a spoonful at a time (about 2 tablespoons should be enough for each Struwen) and fry on both sides. Fry the Struwen on each side at medium heat until golden yellow. Sprinkle with sugar and cinnamon and serve. Tip: You can use apple pieces instead of the raisins.
