Ingredients for 1 servings:

  • 400 g flour
  • 500 g low-fat curd cheese
  • 250 g sugar
  • 4 eggs
  • 1 tsp salt
  • 1 packet of baking powder
  • 1 tbsp vanilla sugar
  • 1 vanilla pod(s), scraped out seeds
  • 1 lemon(s) (organic), grated peel
  • 3 cups clarified butter for frying
  • 150 g sugar
  • 2 tsp cinnamon

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

Deep-fried foods, beware of addiction!

Beat the eggs and sugar until frothy, about 3 minutes. Add the quark and salt and beat for another 1 minute. Add all the remaining ingredients and beat until the flour is well incorporated. Heat the fat in a saucepan. When you see bubbles forming on the wooden spoon, you can add the first Mäusle: Using two teaspoons, drop the batter in portions into the hot fat. Important: Do not let the fat get too hot! Bake the Mäusle for 2-3 minutes, until they have turned a golden brown color. The Mäusle should turn on their own, but if they don’t, you’ll have to help them. After baking, drain the Mäusle on kitchen paper and then roll them in plenty of cinnamon sugar or just dust them with powdered sugar. The fresh Mäusle are very easy to freeze; they thaw in a few minutes and taste really fresh. That’s why it’s worth baking the whole recipe. Tastes delicious and really addictive! Many members of our Aloha group confirmed this to me. The recipe yields approximately 80 Quarkmäusle.
