Ingredients for 4 servings:

  • 1 can of fruit (akée), 400 g each
  • 60 g butter
  • 20 g flour
  • 400 ml milk
  • ½ tsp salt
  • 1 pinch of white pepper
  • 1 pinch of allspice powder
  • 1 pinch of garlic powder
  • 1 tsp Worcestershire sauce
  • 5 eggs

unusual Jamaican appetizer

Ackee, or aki, is Jamaica’s national fruit. It’s rarely available fresh outside of Jamaica, but canned fruit works just as well for this recipe. Lightly butter a baking dish. Melt the remaining butter in a sufficiently large saucepan. Sprinkle the flour over the dish and let it brown. Pour in the milk, bring to a boil, and simmer gently for a few minutes. Add the salt, pepper, allspice, garlic powder, and Worcestershire sauce. Separate the eggs and whisk the egg yolks into the slightly cooled milk mixture. Drain the ackee well, add it, and blend until smooth using a hand blender. Allow the contents of the dish to cool to room temperature, then fold in the stiffly beaten egg whites and pour the mixture into a baking dish. Bake the appetizer in an oven preheated to 190°C (375°F) for about 35 minutes, until the soufflé has risen and the top is lightly browned.
