Egg in Avocado

Ingredients for 2 servings:

  • 1 avocado(s)
  • 2 small eggs
  • 2 tbsp Cheddar cheese, grated
  • salt and pepper
  • e.g. chopped parsley

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Preheat oven to 220°C (top/bottom heat). Halve the avocado and carefully scoop out the pit. Carefully enlarge the hole with a spoon to ensure the egg fits completely inside. Place the avocado halves in a small baking dish lined with baking paper. Crumple the baking paper so that the avocado halves cannot fall over. Carefully place an egg in each hole. Season with salt and pepper and sprinkle with cheese. Bake in the hot oven for about 15 minutes. Sprinkle with fresh parsley to serve.
