Swabian Maundy Thursday cake

Ingredients for 4 servings:

  • 200 g flour
  • 3 tbsp water
  • ½ tsp salt
  • 150 g butter
  • 2 bunch spring onions
  • 2 cups of sour cream, approx. 150 g each
  • 4 eggs
  • 100 g smoked bacon
  • 2 tbsp flour
  • Salt
  • 100 g Emmental cheese, grated

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 10 minutes

Onion Tube Cake

Prepare a shortcrust pastry from the dough ingredients, let it rest for half an hour, then line a prepared 32 cm springform pan with it. Cut the onion tubes (spring onions) into approximately 1 cm long pieces and spread them on the cake base. Mix the sour cream with eggs, bacon, flour, and salt and spread on the tubes. Sprinkle with grated cheese. Bake in a preheated oven at 225°C (top/bottom heat) for approximately 15-20 minutes. Serve hot. Traditionally served on Maundy Thursday. The “green” in front of the word Thursday doesn’t come from the color, but from “Greinen,” meaning to cry (e.g., when cutting onions).
