Ingredients for 2 servings:

  • 250 g flour and some for the work surface
  • 125 g butter
  • 1 egg(s)
  • 1 pinch of salt
  • 2 tbsp water
  • 1 package of sausage (pepper bites), quantity according to taste
  • 1 small jar of Bockwurst, amount according to taste
  • Butter for frying
  • 1 bunch of spring onions
  • 3 eggs
  • 200 g sour cream
  • 100 g cheese, grated
  • 1 small jar of pickled gherkins
  • salt and pepper
  • Garlic
  • Parsley
  • 1 can of fried onions for garnishing

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

For the shortcrust pastry, mix flour, butter, egg, salt, and water into a dough. Lightly flour the work surface. Roll out the dough and place it in the dish, pressing it down to create a 3 cm edge. Prick the dough a few times with a fork. Then pre-bake the base for about 12 minutes at 180°C (top/bottom heat) and remove from the oven. For the topping, wash and chop the spring onions. Chop the frankfurters and pepper bites and place them in a pan with a little butter. Fry the sausages over medium heat for several minutes, depending on the desired degree of browning. Meanwhile, for the topping, beat the eggs, then add the sour cream, cheese, finely chopped gherkins, and seasonings if desired, and stir in. Place the fried sausages and spring onions on the pre-baked dough. Then pour the egg and sour cream mixture over the top and spread it out. Bake the finished quiche for another 30 minutes at 180°C. Finally, serve the quiche, garnished with fried onions and served with curry ketchup. Note: The name Quiche du Keno comes from a Paderborn-based amateur chef who proudly goes by the name Keno.
