- 2 kg potatoes, raw
- 2 tbsp sour cream
- 1 egg(s)
- 2 tbsp potato flour or semolina
- Salt
- lots of herbs, fresh spring herbs
- 1 onion(s), grated
- Fat for frying

Griene Pannekuchen
Peel and grate the potatoes, and drain them in a sieve. Immediately mix with sour cream (or sour milk) to prevent discoloration. Thicken the batter with the egg (or more sour cream) and potato flour or semolina (semolina is recommended for new potatoes), and season well with salt. Fold in the finely chopped herbs and add finely grated onion, if desired. Heat a generous amount of shortening. Drop in the batter by the spoonful and flatten. Cook the pancakes until brown and crispy on both sides. Serve with applesauce.
