Ingredients for 4 servings:

  • 300 g sausage (Mettwurst)
  • 300 g potatoes (floury, boiled)
  • 600 g potatoes (floury, raw)
  • 200 ml cream
  • 4 eggs
  • salt and pepper
  • nutmeg
  • Fat, for the shape
  • Clarified butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Mince cooked potatoes. Finely grate raw potatoes and squeeze dry liquid into a kitchen towel. Knead the potatoes, cream, eggs, diced Mettwurst, and seasonings into a dough. Pour into a greased loaf pan and bake in a preheated oven (175°C) for about one hour. Let cool, slice, and fry in clarified butter. Serve with Westphalian ham and a mixed salad.
