Polish potato salad

Ingredients for 6 servings:

  • 1 ¼ kg potatoes, waxy
  • 400 g carrot(s)
  • ½ celeriac
  • ½ jar pickle(s)
  • 1 onion(s)
  • 1 apple, Boskoop
  • 1 small can of peas
  • 4 eggs
  • ½ bunch flat-leaf parsley
  • 1 jar Miracle Whip
  • salt and pepper

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Boil the potatoes. Peel the celery and carrots and cook them as well. Once cooled, cut the cooked vegetables and potatoes into small cubes. Finely dice the eggs, onions, pickles, and apple. Squeeze the pickles before adding them to the bowl, otherwise they’ll have too much juice. Place everything in a bowl and mix together. Add the mayonnaise and season with salt and pepper. Finally, finely chop the parsley and fold it in.
