Serbian bean soup

Ingredients for 4 servings:

  • 300 g beans, dried white
  • 250 g bacon, streaky
  • 250 g onion(s)
  • 2 garlic cloves
  • ½ tsp sugar
  • 2 tbsp tomato paste
  • 2 green bell peppers (250 g)
  • 4 tomatoes (250 g)
  • 250 g Cabanossi
  • salt and pepper
  • basil
  • marjoram

Soak the beans overnight. The next day, add the beans to a boil with two liters of water (use the soaking water) and the bacon. Simmer for one hour. Finely chop the onion and garlic cloves and add to the beans along with salt, pepper, basil, marjoram, sugar, and tomato paste. Simmer everything over low heat for another hour. After 30 minutes, add the cleaned and sliced ​​bell peppers, peeled tomato quarters, and sliced ​​Cabanossi and finish cooking. Remove the bacon from the soup, dice it, and return it to the soup. Season the bean soup again with pepper and basil.
