Ingredients for 25 servings:
- 500 g pork (e.g. roast ham or similar)
- 500 g beef (e.g. neck piece or similar)
- 300 g minced meat, mixed
- 2 liters meat broth, cold
- 5 gherkins
- 2 large onions
- 3 cloves garlic
- 500 g tomatoes, pureed
- 500 g tomatoes, chopped from the can
- 2 medium-sized bell peppers, red
- 2 medium-sized bell peppers, green
- 2 medium-sized peppers, yellow
- 1 lemon(s)
- 1 can of corn
- 1 can kidney beans
- 300 g potatoes, cut into julienne strips
- 2 tbsp olive oil or sunflower oil
- 1 bunch of parsley
- ½ tsp sugar
- salt and pepper
- Paprika powder, hot
Instructions

Recipe for a party soup – a large pot of soup
Brown the finely chopped onions, very finely chopped garlic, and diced meat in olive oil in a large soup pot. Stir the minced meat into the cold meat broth until it has ‘dissolved’ into small flakes. Add this mixture to the pot along with the potato sticks. Add the finely diced gherkins, as well as the diced bell peppers, corn, and washed kidney beans. Now add the passata, the tomato pieces, and the sugar. Season to taste with salt, pepper, paprika, and lemon juice. Let the soup simmer for about 1-1.5 hours on very low heat with the lid slightly closed. If the flavor is still lacking, add instant meat broth (but please be careful!). This soup goes best with a fresh baguette or ciabatta. This soup tastes even better reheated, so cook it the day before and simply reheat it on the day of the celebration.
