Ingredients for 1 servings:

  • 75 g butter, soft
  • 150 g sugar
  • 2 packets of vanilla sugar
  • 1 pinch of salt
  • 4 eggs
  • 100 g flour
  • 50 g cornstarch
  • 1 tsp, heaped baking powder
  • 700 g apples, cleaned and peeled
  • ½ lemon(s), juice
  • 150 g crème fraîche
  • Powdered sugar, for sprinkling

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with crème fraîche topping, for 12 pieces

Preheat the oven to 180°C. Cream the softened butter with 100g of sugar, 1 sachet of vanilla sugar, salt, and 2 eggs until fluffy. Combine the flour, cornstarch, and baking powder and stir into the batter. Pour into a greased and floured springform pan (28cm diameter) and smooth the surface. Cut the apples into thin slices, marinate them with lemon juice, and spread them over the batter, pressing down lightly. Bake the cake on the bottom rack for about 30 minutes. Mix the crème fraîche with the remaining 2 eggs, 1 sachet of vanilla sugar, and the remaining 50g of sugar. Pour over the apple cake and bake on the middle rack of the oven for about 20-30 minutes until golden brown. Once cooled, sprinkle with powdered sugar.
