Greek pasta salad

Ingredients for 4 servings:

  • 300 g pasta (fusilli)
  • 3 tbsp olive paste (olive and anchovy tapenade)
  • 1 tbsp olive oil
  • 50 g pine nuts
  • 100 g feta cheese
  • cucumber(s)
  • 1 small onion(s)
  • 1 bunch of basil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Dice the feta cheese and cucumber, slice the onion, and finely chop the basil. Cook the pasta, drain, and toss with the tapenade and olive oil. While the pasta is cooking, dry-fry the pine nuts for 1-2 minutes until golden. Be careful, they can burn very quickly! Mix the pine nuts, pasta, feta cheese, cucumber, onion, and basil. Season to taste and serve warm or cold. Serve with grilled chicken or fish.
