Ingredients for 4 servings:
- 5 cm ginger, chopped
- 2 tbsp rice wine
- Salt
- 2 tsp cornstarch, dissolved in water
- 4 tbsp rice wine
- 4 tbsp sugar
- 4 tbsp ketchup
- 1 pinch of salt
- 2 tsp soy sauce
- 2 tbsp white vinegar
- 250 ml water
- 1 fish, whole sea bream approx. 500 g (or perch) *
- Oil for frying
- 1 egg yolk
- 1 garlic clove(s)
- 3 shallots
- 50 g peas, frozen
- 1 bell pepper(s), red
- 1 can pineapple
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 42 minutes
Chinese recipe
Wash the fish thoroughly and make three cuts on each side. Then marinate the fish for at least one hour. Meanwhile, combine the sauce ingredients. Brush the fish with egg yolk and fry in hot oil for about 4-6 minutes on each side. Place the fish on a platter and cover with foil. Sauté the shallots and garlic in the oil, add the sauce mixture, and let it thicken. Add the peas, chopped bell pepper, and pineapple and cook. Pour the sauce over the fish and serve. *If several dishes are being served, as is common with Chinese dishes, one fish is sufficient. However, if it is a separate dish, two fish should be fried.
