Lemon chicken

Ingredients for 4 servings:

  • 8 chicken breast fillets
  • Salt
  • Pepper, freshly ground
  • 1 tbsp oil (sunflower oil)
  • 50 g butter
  • 1 bay leaf
  • 1 sprig(s) of thyme
  • 1 large lemon(s), the grated peel and the juice
  • 4 tbsp jam (lemon)

Working time approx. 25 minutes; Total time approx. 25 minutes

Lemon Chicken

Cut the chicken breast fillets into large pieces and season as desired. Heat the oil and half the butter in a pan. Then add the bay leaf, thyme, and chicken and cook, stirring constantly, until the meat is golden brown and fully cooked. Now add the lemon zest and juice and cook for about 30 seconds (until the chicken pieces are completely coated with lemon). Mix the marmalade with 2 tablespoons of water and add to the pan. Stir until the marmalade has combined with the other spices to form a bubbling mass. Now stir in the remaining butter for extra brightness and flavor. Serve immediately. Serve with rice as a side dish.
