Butter cake Breton style

Ingredients for 1 servings:

  • 300 g flour
  • 300 g butter, soft
  • 300 g sugar
  • 1 pinch of salt
  • 7 egg yolks
  • some butter to coat the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Put the flour on a work surface and make a well in the center. Add the salt, flaked butter, sugar, and 6 egg yolks to the well. Now knead everything with your hands until you have a tough dough. Don’t knead for too long, or the cake will be too dry after baking. For this reason, the dough should never be prepared in a bowl with a mixer. Grease a 26 cm springform pan with butter and press the dough evenly into the pan with your hands. Brush with the remaining egg yolk. To give the cake its typical look, you can create a checkered pattern on the surface using a fork. Bake at 180°C (top/bottom heat) for about 35 minutes. We think the cake tastes best when it’s still slightly warm.
