Ingredients for 6 servings:

  • 2 tsp oil (sesame oil), dark
  • 1 tsp fresh ginger, finely chopped
  • 3 cloves garlic, crushed
  • 2 tbsp soy sauce, light
  • 2 tbsp rice wine, alternatively sherry
  • ½ tsp five-spice powder
  • 2 tbsp honey
  • 1 tsp sambal oelek
  • ½ tsp salt
  • 1 ½ kg pork ribs, cut into individual ribs
  • 1 tbsp Chinese chives, chopped
  • 2 lemons, cut into pieces

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

from Singapore and Malaysia

Combine sesame oil, ginger, garlic, soy sauce, rice wine, 5-spice powder, honey, sambal oelek, and salt in a bowl. Add the ribs and stir until coated with the marinade. Cover and let marinate overnight or for at least 4 hours. Heat a charcoal grill and grease the ribs with oil. Grill the ribs on the grill. Brush the ribs with the marinade every 15 minutes until they are dark brown and crispy. Sprinkle with chives and serve with rice and lemon wedges.
