Greek-style mushrooms

Ingredients for 1 servings:

  • 750 g mushrooms, small
  • 1 large onion(s)
  • 1 garlic clove(s)
  • 3 tbsp tomato paste
  • 3 tbsp vinegar
  • 300 ml water
  • 4 tbsp oil, neutral in taste
  • Salt and pepper, freshly ground
  • 1 bunch of parsley

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 4 hours; Total time approx. 4 hours 15 minutes

French appetizer, can be served hot, lukewarm or cold

Clean the mushrooms and halve any larger ones. Finely chop the onion and garlic. Then add all ingredients, except the parsley, to a pot and mix well. Cover and simmer over low heat for 3 to 4 hours, stirring occasionally. Cook in a pressure cooker for 1.5 to 2 hours. If necessary, season again with salt, pepper, and vinegar and stir in the chopped parsley. Although it may seem too runny at first, after cooking, you’ll have a wonderfully creamy and aromatic dish. It goes best with fresh baguette.
