Chicken with fruit curry

Ingredients for 3 servings:

  • 500 g chicken breast fillet(s)
  • 1 onion(s) (vegetable onion)
  • 1 can/n fruit cocktail
  • 1 tbsp flour
  • 3 tsp curry powder
  • ¼ liter instant chicken broth
  • 1 cup of cream
  • some lemon juice
  • Salt
  • Sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the chicken breast fillets into bite-sized pieces and fry in a deep pan. Peel the onion, halve it, and thinly slice it, then add it to the chicken and sauté until soft. Drain the fruit cocktail (a little juice can still be retained in the pan) and add it to the pan. Briefly sauté everything with the tablespoon of flour and then stir in the curry powder (you can use a little more or less than 3 teaspoons, depending on your taste). Deglaze with the chicken stock. Pour in the cup of cream and simmer for 5 minutes, stirring occasionally. Add a dash of lemon juice and season with salt and sugar (don’t be too stingy with the sugar; it tastes great when it has a really sweet flavor; it’s best to taste it regularly). Serve with rice. Enjoy!
