Peach Whiskey BBQ Chicken

Ingredients for 6 servings:

  • 12 chicken legs
  • 2 tbsp oil, neutral
  • 30 g butter
  • 1 large onion(s)
  • 150 ml whiskey
  • 180 ml BBQ sauce
  • 1 jar peach jam
  • 100 ml water
  • 2 tbsp Worcestershire sauce
  • 4 garlic cloves
  • 1 bunch of spring onions for garnishing

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 50 minutes; Total time approx. 2 hours 10 minutes

Bone the chicken thighs (remove them from the bone) and pin them together with roulade pins, skin-side out. Preheat the oven to 150°C (top/bottom heat). Add oil to a roasting pan and fry the chicken thighs briefly over high heat. Remove the thighs. Sauté the diced onion in the roasting pan with the butter. Deglaze everything with whiskey and let it reduce briefly. Then add the BBQ sauce, peach jam, water, and Worcestershire sauce and mix well. Add the garlic cloves to the sauce and place the chicken thighs on top. Cover the chicken with the lid of the roasting pan or aluminum foil and place in the oven for 90 minutes. Garnish the dish with spring onions. Classic mashed potatoes and sweetcorn vegetables go well with this dish.
