Parmesan chicken with mushrooms and tomatoes

Ingredients for 4 servings:

  • 2 chicken breast fillets
  • 4 tbsp flour
  • 4 tbsp Parmesan
  • 1 tsp salt
  • 1 tsp pepper
  • 1 garlic clove(s)
  • 200 g tomatoes, dried in oil
  • 250 g mushrooms
  • 300 ml milk
  • 40 g Parmesan
  • 2 tbsp basil, chopped
  • salt and pepper
  • oil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Mix the flour, Parmesan cheese, salt, and pepper for the breading. Halve the chicken breasts to create four thin fillets and coat them in the breading. Briefly fry the chicken in oil and remove from the pan. For the sauce: Peel and finely chop the garlic. Wash and slice the mushrooms. Finely chop the tomatoes. Add the garlic and sun-dried tomatoes to the pan and fry briefly. Add the mushrooms and deglaze with milk once the mushrooms are cooked through. Allow the sauce to thicken and add the Parmesan cheese. Add the basil and season to taste.
