Stuffed potatoes with butter cheese

Ingredients for 3 servings:

  • 8 large jacket potatoes, still warm
  • 100 g peppers, diced, red
  • 100 g peppers, diced, yellow
  • 1 bunch of mixed herbs, chopped
  • 150 g cheese, butter cheese
  • salt and pepper
  • 30 g butter, liquid
  • 30 g butter, in flakes
  • nutmeg

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Cut a lid off the potatoes lengthwise and hollow out the potato and lid, leaving a thin crust. Mash the hollowed-out pieces finely with a fork, mix the diced bell pepper, herbs, and cheese into the potato mixture, and season with salt, pepper, and nutmeg. Using a piping bag (with a star nozzle), fill the potatoes with the mixture. Brush the jacket potatoes with melted butter and dot the filling with butter flakes. Bake in a preheated oven at 220°C for 10-15 minutes.
