Onion Bhaji, recipe from India

Halve the onions and cut into rings. Then separate the individual layers of the sliced onion with your fingers. Finely chop the coriander and chili pepper and add to the onions along with the spices and chickpea flour and mix everything well. Then add the water and mix again. The onions should now be covered in a fairly solid mass, but not swimming in a batter. The individual onion rings should still be clearly visible. Then gradually add about a tablespoon of onion to the hot oil and fry for about 2 minutes until golden brown. Drain the pakora on kitchen paper and season with a little chat masala (like chips with salt). The chat masala is an essential ingredient in pakora and gives it the unmistakable taste of Indian street food. Instead of onion pakora (or onion bhaji), you can also use other vegetables if you like. B. whole green chilies (Mirch Pakora), potato slices (Aloo Pakora), cauliflower (Gobi Pakora), Indian cheese (Paneer Pakora) or peppers etc. The quantities given here are enough as a starter for 2 people
