Crème brûlée with powdered sugar and crème fraîche

Ingredients for 4 servings:

  • 4 egg yolks
  • 40 g powdered sugar
  • 100 ml milk
  • 300 g crème fraîche
  • 40 g sugar, brown

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 25 minutes

Preheat the oven to 150°C. Whisk the egg yolks with the powdered sugar until pale yellow. Heat the milk, but do not boil, and stir in the egg custard. Allow the mixture to thicken slightly, but do not allow it to boil. Remove from the heat and stir in the crème fraîche. Pour the mixture into small molds, place in a water bath in the oven, and bake for 35 minutes. Remove from the oven, let cool, and then refrigerate for a while. Shortly before serving, preheat the oven grill. Sprinkle the crème brûlée with sugar and let it caramelize under the grill. A blowtorch can also be used for caramelization.
