Ingredients for 3 servings:
- 600 g turkey breast fillet(s) or chicken breast fillet
- 1 red bell pepper(s)
- 1 bell pepper(s), yellow
- 250 g spring onions
- 1 tbsp basil, chopped
- 400 ml coconut milk, unsweetened
- 1 tbsp yellow curry paste
- 2 tbsp soy sauce
- 1 tbsp sugar
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Wash the bell peppers and spring onions. Cut the meat into strips, the bell peppers into thin strips, and the spring onions into wide rings. Bring the coconut milk to a boil in a wok. Stir in the curry paste and simmer for 1 minute. Add the turkey or chicken breast strips and simmer for another 4 minutes, stirring occasionally. Add the vegetables and simmer for another 3 minutes. Finally, stir in the basil, soy sauce, and sugar. Serve with Chinese egg noodles, which can be stirred into the ragù before serving, or with basmati rice.
