Ingredients for 12 servings:

  • 2 tbsp salt
  • 2 cloves garlic
  • 3 tbsp lime juice
  • 1 tbsp pepper
  • ½ cup(s) brown rum
  • 3 tbsp butter, melted
  • 2 tbsp curry powder
  • 2 slice(s) smoked bacon, chopped
  • 30 g butter
  • 0.33 cup(s) onion(s), chopped
  • 1 cup(s) leeks, white part, chopped
  • 1 apple, chopped
  • 1 pear(s), chopped
  • 2 tbsp brown rum
  • ½ cup(s) apricot(s), dried, chopped
  • 6 slice(s) white bread, in cubes
  • ¼ cup(s) fig(s), dried, chopped
  • 1 tbsp sage
  • ½ tsp cinnamon
  • 3 tbsp parsley
  • 1 turkey
  • Salt
  • pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Christmas roasted peas

Rub the turkey with the first 5 ingredients and marinate overnight in the refrigerator. Mix the melted butter with the curry powder and use it to brush the bird. Fry the bacon in the butter, add the leek, onion, apple, and pear, and cook for 2 minutes. Flambé with the rum. Transfer to a bowl and mix with the remaining ingredients, stuff the turkey, and sew up. Roast in a preheated oven at 150°C for 5 hours, brushing regularly with the curry butter. Turn the bird every 30 minutes. Serve with rice pilaf.
