Ingredients for 8 servings:

  • 5 ½ kg turkey
  • 2 rolls
  • 50 g butter
  • 2 onions
  • 2 apples
  • 1 bunch of mugwort
  • 1 small bunch of thyme
  • 1 pinch(s) of sugar
  • Salt
  • pepper

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

with low-temperature cooking

Wash the turkey thoroughly inside and out, then dry well with kitchen paper. Season with salt and pepper to taste. Peel the apples, remove the core, and cut into small cubes. Dice the bread rolls as well. Melt the butter in a large pan over medium heat, add the finely chopped onions, bread rolls, and apple cubes. Stir occasionally until the bread rolls are lightly browned. Meanwhile, finely chop the herbs. Mix the herbs into the apple, bread roll, and onion mixture and season with pepper, salt, and a little sugar. Pour the mixture into the turkey and seal it tightly. Place the turkey on a roasting tray and place it in a preheated oven (200°C) for 1 hour. Turn the turkey over after half an hour. Then reduce the oven temperature to 80°C and let the turkey roast for another 9 hours. If you have an older oven, it’s best to use an oven thermometer to check that the temperature is being maintained. Finally, increase the temperature to 200°C for another half hour. Be sure to let the turkey rest for about 15 minutes before carving.
