Ingredients for 6 servings:

  • 1 jar of oil e.g. B. sunflower oil
  • 2 jars of flour
  • 2 glasses of water
  • 2 glasses of sugar
  • n. B. Walnuts, coarsely chopped
  • e.g. raisins

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Helva the Albanian way

A 200 ml glass of water is enough to measure. Heat the oil in a deep pan or saucepan and add the flour. Toast the flour over medium heat, stirring constantly with a wooden spoon, until it turns caramel. This will take at least half an hour. Bring the water to a boil, carefully add it to the flour (risk of burning!) and continue stirring. Turn off the heat. Stir in the sugar. If desired, add a handful of raisins and chopped walnuts. Cover the mixture for 5 to 10 minutes with a paper towel between the pan and the lid, and then divide it between serving plates using an ice cream scoop or a spoon. The dessert can be served warm or cold.
