Christmas muffins with cranberries

Ingredients for 1 servings:

  • 125 g cranberries
  • 150 g sugar
  • 250 g flour
  • 2 ½ tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • ½ tsp cinnamon
  • ½ tsp all-spice seeds
  • 1 egg(s)
  • 100 ml orange juice
  • 50 g butter, melted
  • 30 g hazelnuts, chopped

Working time approx. 30 minutes; Total time approx. 30 minutes

Cranberry muffins

Roughly chop the cranberries, sprinkle with half the sugar, and set aside in a bowl. Crush the allspice berries. Combine the flour, remaining sugar, baking soda, baking powder, allspice, cinnamon, and salt in a bowl. In another bowl, whisk the egg with the butter and orange juice, then add to the flour mixture and mix. Finally, add the cranberries and nuts to the batter. Line a muffin tin with paper baking cups and fill with the batter. Bake at approximately 200°C (400°F) for 15-20 minutes, then let cool on a wire rack.
