Apple marzipan cupcakes with cinnamon cream

Ingredients for 1 servings:

  • 125 g sugar
  • 125 g butter, room temperature
  • 125 g flour
  • 2 eggs (size L)
  • 1 tsp baking powder
  • 2 m.-sized apples
  • 100 g marzipan
  • some cinnamon powder
  • 200 g cream
  • 1 tsp cinnamon powder, more if needed
  • some sugar
  • Paper cups

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wonderfully delicious cupcakes that warm the heart on cold days. Makes 18 cupcakes

Preheat the oven to 170°C and arrange paper baking cups on the muffin tins. For the cupcakes, cream the sugar and butter until fluffy and gradually add the eggs. Continue beating the mixture for at least 3 minutes. Mix the flour with the baking powder and a little cinnamon and stir in slowly, then briefly run the food processor on medium speed. Shave the marzipan and cut 1 1/2 apples into very small pieces and add to the batter. Grate the remaining half apple and mix everything well. Divide the batter among the 18 cases and bake at 170°C for 20 minutes (do the skewer test, as not all apples are the same and the batter will cook differently). Then let cool on a wire rack. For the topping, whip the cream with a little sugar and cinnamon until stiff peaks and pipe onto the cupcakes.
