Ingredients for 1 servings:
- 1 pack of pre-cooked udon noodles (200 g)
- 4 slice(s) tofu, deep-fried
- 2 shiitake mushrooms, dried
- ¼ bell pepper(s)
- 2 spring onions
- 2 chili peppers, red
- 1 garlic clove(s), chopped
- 1 tbsp hoisin sauce
- 1 ½ tbsp oyster sauce (alternatively: vegetarian mushroom sauce)
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
A quick, fried udon dish with hoisin sauce, tofu, spring onions, and chilies – vegetarian/vegan available.
Pour boiling water over the mushrooms, let them soak until they are soft and juicy, then slice the caps and discard the stems. Pour boiling water over the noodles, cook for about 2-3 minutes (or according to the package instructions), but do not allow them to become too soft, and then drain. Chop the chilies and spring onions. Cut the green parts of the spring onions into 2-3 cm pieces. Sauté the garlic together with the chilies and the white spring onion rings, then add the mushrooms and continue to fry briefly. Halve the tofu and fry it. After a short while, add the bell peppers and the green spring onion pieces. Shortly after, add the noodles and fry everything briefly. Add a little pasta water if necessary. Add the hoisin sauce and oyster sauce (or alternatively mushroom sauce), season to taste, and mix everything well.
