Ribbon pasta with spring onions and mushrooms

Ingredients for 4 servings:

  • 400 g tagliatelle pasta
  • 250 g mushrooms, fresh
  • 1 bunch of spring onions
  • 1 m.-large chili pepper(s), alternatively also peperoncino
  • 1 lemon(s), juice
  • 4 tbsp Mediterranean herbs
  • salt and pepper
  • olive oil
  • Parmesan

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cook the tagliatelle pasta al dente. Slice the spring onions diagonally, slice the mushrooms thickly, and finely chop the garlic, chili pepper, and herbs. Heat olive oil, sauté the spring onions and mushrooms until well browned, add the garlic and chili, and season with lemon juice, herbs, salt, and pepper. Stir in the tagliatelle pasta and serve with Parmesan shavings.
