Lo Mein with mushrooms and snow peas

Ingredients for 3 servings:

  • 400 g soba noodles, thick
  • 250 g mushrooms, brown
  • 3 spring onions
  • 1 handful of sugar snap peas
  • 100 ml vegetable stock
  • 3 tbsp soy sauce
  • 2 tbsp fish sauce, vegan
  • 1 tsp Sriracha sauce
  • 1 tsp garlic
  • 1 tsp ginger
  • 1 tsp cornstarch
  • ½ tsp sesame oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

a quick, vegan recipe

Mix the sauce ingredients and set aside. Slice the spring onions, reserving the green part. Slice the mushrooms and fry them with the white part of the spring onions in a large pan until browned, then season lightly with salt and pepper. Add the snow peas and fry for 3 minutes. Meanwhile, soak the soba noodles in hot water for 2 minutes, then carefully unravel and drain. Add the noodles and sauce to the pan and bring to a boil, stirring constantly, until the sauce thickens. Finally, stir in the green part of the spring onions. Note: Vegan mushroom-based fish sauce is available at Asian stores, or you can make it yourself.
