Leaf salad with melon

Ingredients for 4 servings:

  • 250 g mixed leaf salad
  • 250 g honeydew melon(s) or cantaloupe melon
  • 1 shallot(s)
  • 5 sprigs tarragon
  • 1 tsp mustard, hot
  • 2 tbsp vinegar (white wine vinegar)
  • salt and pepper
  • ½ tsp honey
  • 4 tbsp olive oil
  • 100 g ham, raw, smoked, thinly sliced

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

French salad

Trim and wash the lettuce, spin dry, and tear into bite-sized pieces. Deseed, peel, and slice the melon. Peel and finely chop the shallot. Wash and shake dry the tarragon, pick off the leaves, and chop very finely. For the dressing, thoroughly mix the shallots, tarragon, and mustard with the white wine vinegar, salt, pepper, and honey, gradually whisking in the olive oil. Loosely toss the lettuce and melon with the dressing and divide among plates. Tear the ham into pieces and arrange on top. Serve with baguette.
