Ingredients for 4 servings:
- 300 g onion(s)
- 1 garlic clove(s)
- 40 g butter
- 20 g flour
- 1.250 ml meat broth, hot
- salt and pepper
- 4 slices of white bread (20 g each) or toast
- 100 g cheese, grated gratin cheese
Instructions

Gratinated onion soup
Peel the onions and cut into rings (or cubes, if you prefer smaller pieces). Peel and finely dice the garlic cloves. Heat the butter in a saucepan. Fry the onions and garlic until light yellow. Dust with flour. Sweat for 5 minutes, stirring continuously. Add the hot meat broth. Stir. Simmer over low heat for 20 minutes. Season generously with salt and black pepper. Toast the crustless slices of white bread. Place in an ovenproof dish. Pour the soup over them. Sprinkle with grated cheese. Place immediately on the top rack of the preheated oven. Baking time: about 10 minutes. Electric oven: 250°C. Gas oven: Mark 7 or almost full heat. Remove the soup from the oven and serve immediately. You can also gratinate the soup in batches in the oven in ovenproof soup bowls. To do this, cover the bowls with toasted cubes of white bread and sprinkle with cheese.
