Ingredients for 4 servings:
- 1 can of tuna
- 3 anchovies
- 2 tomatoes
- 1 handful of beans – seeds, young
- 1 cucumber(s)
- 2 eggs, hard-boiled
- Black olives, pitted, as required
- 1 tbsp mustard
- 2 tbsp olive oil
- 1 cup of yogurt
- 1 lemon(s), the juice
- 1 tbsp vinegar (red wine vinegar)
- Salt
- pepper
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Salad Nicoise
Tear apart the tuna and finely chop the anchovies. Quarter the tomatoes; do not slice them. Combine both in a bowl. Add the bean kernels, the washed and sliced cucumber, and the quartered hard-boiled eggs. Add the olives. For the salad dressing, combine all the ingredients, pour over the salad, and mix well.
