Ingredients for 4 servings:

  • 1 can of tuna
  • 3 anchovies
  • 2 tomatoes
  • 1 handful of beans – seeds, young
  • 1 cucumber(s)
  • 2 eggs, hard-boiled
  • Black olives, pitted, as required
  • 1 tbsp mustard
  • 2 tbsp olive oil
  • 1 cup of yogurt
  • 1 lemon(s), the juice
  • 1 tbsp vinegar (red wine vinegar)
  • Salt
  • pepper

Salad Nicoise

Tear apart the tuna and finely chop the anchovies. Quarter the tomatoes; do not slice them. Combine both in a bowl. Add the bean kernels, the washed and sliced ​​cucumber, and the quartered hard-boiled eggs. Add the olives. For the salad dressing, combine all the ingredients, pour over the salad, and mix well.
