Fish Strudel

Ingredients for 4 servings:

  • 4 sheets of puff pastry, frozen
  • 300 g spinach
  • 400 g fish fillet(s) (cod or redfish)
  • 230 g cream cheese with herbs
  • 2 egg yolks
  • 6 tomatoes
  • 2 garlic cloves (chopped)
  • salt and pepper, pepper
  • Thyme
  • 1 tbsp oil

Working time approx. 20 minutes; Total time approx. 20 minutes

Great for the holidays. Sophisticated yet simple!

Thaw the puff pastry. Then stack the puff pastry sheets on top of each other and roll them out into a rectangle. Blanch the spinach and drain on kitchen paper. Spread the spinach on the puff pastry and season with salt and pepper. Whisk the cream cheese with an egg yolk and spread the mixture over the spinach. Place the fish fillets in the center and roll everything up into a strudel. Brush the surface with egg yolk and bake everything for 30 minutes at 220°C (electric oven) on a baking sheet lined with aluminum foil. Dice the tomatoes and fry them in a little oil. Add the chopped garlic. Season with salt, pepper, and thyme and serve with the strudel.
