Tomato and goat cheese quiche

Ingredients for 6 servings:

  • 250 g tomatoes, red and yellow
  • ½ bunch thyme
  • 250 g goat’s cheese
  • 125 g crème fraîche
  • 3 eggs
  • salt and pepper
  • 275 g puff pastry, fresh (25 x 42 cm) from the refrigerated section
  • 70 g olives, black

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat the oven to 200 degrees Celsius (top/bottom heat). Wash and slice the tomatoes. Wash the thyme, shake it dry, and pluck half the leaves from the stems. Mix the cream cheese, crème fraîche, and eggs, add the thyme leaves, and season with salt and pepper. Place the puff pastry in a rectangular dish (approx. 30×40 cm) lined with baking paper, prick several times with a fork. Spread the cheese mixture on top and pre-bake in the oven for 15 minutes. Arrange the tomatoes, olives, and thyme sprigs on top and bake for another 10-15 minutes.
