Ingredients for 4 servings:

  • 375 g lentils
  • 1 ¼ liters of water
  • 1 garlic clove(s)
  • 1 onion(s)
  • Salt
  • 40 g fat
  • 20 g flour
  • 2 tbsp vinegar
  • pepper
  • 2 slice(s) bacon (smoked belly bacon)

Working time approx. 20 minutes; Total time approx. 20 minutes

Swabian lentils

Combine lentils, water, finely chopped onion, diced garlic clove, salt, and two slices of smoked bacon in a saucepan, cover, and simmer gently until softened. Cooking time: approximately 30 to 45 minutes. Make a light roux from the fat and flour, pour in the lentil broth, and add to the lentils. Bring back to a boil briefly, then season with salt, pepper, and vinegar. Spätzle, sausages, and the bacon cooked with the meat make a great side dish!
