Ingredients for 4 servings:
- 300 ml pineapple juice
- 65 ml lime juice, freshly squeezed
- 125 ml soy sauce
- 80 ml ketchup
- 30 ml sesame oil
- 100 g brown sugar
- 2 garlic cloves
- 1 spring onion(s)
- 1.2 kg chicken
- 1 pineapple
- 1 lime(s)

Hawaiian-inspired chicken skewers
Dissolve the sugar in the lime and pineapple juice. Meanwhile, slice the spring onion into very fine rings and chop the garlic cloves into tiny pieces, or use a garlic press. Combine the soy sauce with the sesame oil and ketchup and add to the spring onions and garlic. Add the juice and mix well. Season to taste and adjust the seasoning to your liking. Add the chicken pieces to the marinade and let it marinate thoroughly (overnight is fine), stirring occasionally. Place the marinated chicken pieces in a baking dish and bake at 170°C (350°F) for about 30 minutes, stirring every 10 minutes and brushing with the marinade if necessary. Then let cool. While the meat is cooling, cut the pineapple into bite-sized pieces and slice the lime. Thread the chicken pieces (3-4 pieces) onto skewers, each end with a piece of pineapple and a slice of lime in the middle. E’ai kaua (Bon appétit)
